Cauli is the staple of the Banting diet. It gets boring, really fast. Sure, the mash is delicious and it complements curries and virtually any other dish exceptionally well. But you can't eat it every day. Or rather, you can, but you'll be dreaming about cauli by the end of the first week and that'll turn into nightmares pretty soon.
Try new things with it every now and then, but if you just don't have the time or energy to be bothered about it, there's an even simpler way to deal with it. And this version really does complement any protein dish you care to throw at it. Especially steak (in all its varieties).
Prepare half a head of cauli and half a head of broccoli - that just means wash it and cut off any brown bits as well as the stalks, cut into florets and place them in a container. I have one of those plastic steam-it containers, but if you dont have that, don't worry too much as Pyrex (with a lid) also does the job. Spice the florets with salt, pepper and some mixed/Italian/herb and garlic mix spices and add boiling water. Microwave on high for about 10 minutes.
As soon as it comes out of the microwave, grate some cheddar cheese over it and put the lid back on - the cheese has to melt just a little bit. Serve.
This is a simple recipe. It's not gourmet and it's not something to write home about. But. It is easy and delicious and cheese usually convinces most people to at least try eating the broccoli. Steaming your veggies is the best way to preserve their nutrient content, but that's besides the point. All that really matter is that you enjoy making and eating your food.
