Yesterday was a public holiday. Being a post-grad student with no classes to attend for the past few years meant that I didn't really care that much about it. Now, of course, I have a whole new appreciation for them. Before you dive headfirst into the holiday mood (even if only for a day) just take a moment to remember the fact that you still need lunch for the day after the public holiday.
I thought I had it covered. I took a few extra lamb chops along to the braai (at friends' place), thinking that it would be enough. Wrong. I underestimated how hungry we would be after a day of rigorous physical exertion; namely, cycling, a quick yoga session, and getting a 250cc cruiser off of a trailer and into the garage. And we skipped lunch. Not the best idea.
The braai was fantastic. Catching up with friends and drinking a glass or two of wine is the perfect end to a productive public holiday. We got home at a fairly reasonable time, but then I realised we only had two chops left. Small enough to only be considered as a single serving. Of course hubby gets them in his lunch box. Luckily, I have a back-up stash. Not wanting to resort to the sandwich option (I get iffy about eating the same thing two consecutive work days in a row), I assembled a regular salad and added a can of tuna (in salt water) and a dollop of cream cheese. Add some salt and pepper and there you go, lunch is sorted.
It's always good to have a back up stash. I admit I'm not fond of the smell of tuna, but it tastes great with the cream cheese and it'll get you through the day. Although, a small container of mouth wash kept at your place of work is probably also a good idea. You know, just in case.
