Winter is coming.
Like the greater part of the world population, I am eagerly anticipating the return of Game of Thrones. However, I am also really excited about the changing seasons. Winter means trendy boots, cool coats, and of course comfort food.
My work/life balance seems to be settling into place - finally - and with it a belated return to regular blogging. In order to get that going, I thought I'd share the chicken bake I made last night. Unfortunately, I was a bit late in making it, so we ended up munching away long before it even occurred to me to snap a pic. That's one habit that requires a bit more cultivating. Despite the absence of photographic substantiation, I still think it a worthwhile addition to the blog. It was delicious.
Ingredients:
1 brown onion
4 chicken breasts
1 packet of shoulder bacon
half a head of cauliflower and half a head of broccoli
1 red pepper
250ml fresh cream
grated cheddar cheese
Salt, pepper, mixed herbs, rosemary, garlic flakes
In a pan, fry the onion and bacon until the bacon is nice and crispy. I cut it into small pieces prior to frying. Then add the chicken (also cut into pieces), season with rosemary, salt and pepper and fry for about 2 minutes.
In an oven-proof dish, arrange the cut red pepper and cauli and broccoli florets. Season with salt, pepper, mixed herbs, and some garlic flakes. If you want the cauli and broccoli to be softer, then steam the florets for about 5 minutes before arranging them in the dish. I like it firm and crunchy, but that's a matter of personal preference. When the hot ingredients are ready, add them to the oven-proof dish and arrange it so that everything is spread out more or less evenly. Pour the cream over all and sprinkle grated cheddar cheese on top. Cover the dish with foil and pop in the oven at 180*C for 30 minutes. Serve hot.
